Ready or not, Christmas is almost here! We are actually all done with our family and work get-togethers. We celebrated with my family a couple of weekends ago when we were visiting them in Kelowna. Then, we had turkey dinner with Konrad's family on Monday night. So, we have ticked those events off the list! It was certainly fun touting around Olivia, to be sure.

Actual Christmas Day will be quieter around here. It’s the first Christmas we will be celebrating as our own new family of three. This will give us a chance to start forming our own Holiday traditions. With a capital “H.”

Speaking of Christmas traditions, I know that sweet rolls – especially cinnamon buns – are a standard breakfast item for many North American families on Christmas morning.

About These Gingerbread Overnight Oats

I am not trying to make you break tradition with these Gingerbread Overnight Oats. However, they are delicious and a great make-ahead breakfast option. They also make a smaller portion than a sweet rolls recipe would, making it ideal if you will not be spending Christmas morning with family to share a pan of sweet rolls with.

A bowl of these oats is also an excellent treat for Boxing Day when you feel like a little healthier breakfast after feasting the day before. For those of you who don’t know, Boxing Day is the day after Christmas. It goes all the way back to Medieval times when people of service, i.e. servants, were given boxed-up presents to take home on their day off to open and share with their families.

You can actually go ahead and prepare this overnight gingerbread oatmeal right now to eat any morning in the next 5 days or so. The recipe below is written for 1 serving, but of course, you can double, triple, or quadruple it as needed.

Making Gingerbread Overnight Oats

Like many overnight oats recipes, this one is easy to prepare. To begin, place oats in a mason jar with your choice of milk such as dairy or almond milk, molasses, sugar, gingerbread spice mix, and salt, shaking to combine. You can also stir the mixture together if you like. Then, you can place the jar in the fridge overnight. The oats will soften up and the mixture will thicken to the consistency of cooked porridge. From there, you can serve it in a bowl with a little extra milk and some raisins and pecans for garnish. Feel free to warm it up a little in the microwave if you prefer your oatmeal hot as well.

You can get creative with the garnishes if you would like to as well. A dollop of Greek yogurt or a drizzle of maple syrup or honey are all great options that would take these oats over the top.
